’04 Lightly Fermented Ripes Puerh

Light fermentation for distinctive aging effects.

Ripe pu‑erh is one of the defining styles of post‑fermented tea, created through a controlled process known as wet‑piling, essentially a managed form of composting that accelerates microbial transformation. When fermentation exceeds 70%, a ripe pu‑erh is considered heavily fermented, producing the thick, smooth, earthy character associated with classic shou. Teas fermented below 70% fall into the lightly fermented category. These lighter ripes retain some qualities of raw tea—most notably astringency, a brighter soup, and lighter yedi (spent leaf) coloration.

Light‑fermentation ripes are crafted with the intention of approximating aged sheng pu‑erh, offering a bridge between raw and ripe profiles. Because of their partial fermentation, they typically benefit from several years of storage to develop sweetness, soften edges, and achieve a more rounded, mellow character.

’09 Macanese Mushroom

The Macanese Mushroom Brick constitutes a savory standout stored under moderately heavy humidity.  Comprised primarily of Menghai-region material, likely Kunming Tea Factory commission.  Stored in Los Angeles since March 2022.

’07 Silver Peacock

Cocoa, camphor, and petrichor collide in this mellow mid-aged ripe puerh ensemble. Zhang Jian-li, one of Menghai Tea Factory’s Five Flowers, crafted this light-fermentation ripe with clear intentionality.  Latest batch stored since April ’23.

’06 T8371

The ’06 T8371 ripe brick delivers crystal clarity and deep earthiness. Guangdong storage remains a favorite among ripe junkies for its transformative depth. T8371 hits that mark while keeping its brilliance intact—dark ruby liquor, sparkling clarity, and a clean finish that lives up to Zhongcha’s high standards. Resting in Los Angeles storage since 2018.

’06 “55”– Gold Bud Edition

Petrichor mingles with ancient trade-route treasures—rose, vetiver, myrrh, and cedar.  Seasoned drinkers familiar with Zhongcha’s classic 7581—the Frank Sinatra of ripe puerhs—will recognize this cake’s superior expression, enhanced by a profusion of golden buds.  LA residence since 2019.

’06 Pinesap Surprise

A mid-aged ripe tuo from Langhe Factory that showcases a deft convergence of cocoa, umami, and vintage newspaper.  What began with a faint vegetal whisper has matured into a distinctive pinesap character thanks to Los Angeles dry-storage since November 2021.
