The nose is inviting, sweet with camphor around the edges of what is most recognizably cocoa and umami. Light petrichor. A sour twang descends into incense-y newspaper, umami, some mystery savory notes, finished with baker’s chocolate bitterness and astringency. Old book taste accompanied by evanescent cherry note, amidst the other flavours. The cherry doesn’t bonk you over the head, though in some sessions it’s more up front. Less sweet than most ripes. Moderate compression. From Golden Sail, the Guangdong export division of the Zhongcha, before restructuring in 2007. Kunming stored, in Los Angeles since April ’21.
